It’s a weekend morning and what’s a better way to start the day than pancakes for breakfast or even better, chocolate chip pancakes? I honestly don’t know. I mean pancakes, yogurt and some fruit makes one of the best breakfasts out there. Sure it’s not the healthiest, but hey, if you make it from scratch how bad can it be? To make these, I usually just follow a simple pancake batter recipe and then toss in some chocolate chips. You could also toss in raspberries or butterscotch chips or blueberries or any other fruit as well. I mean, pancakes are an awesome base. Seeing as Pat and I are pretty big Adventure time fans, I’m sure we’ll be making bacon pancakes sometime in the future as well.

Ingredients:-1 1/2 cups AP flour -1 1/4 cups milk -3 1/2 tsp baking powder -1 tsp salt -1 tbsp sugar -1 egg -3 tbsp butter (melted) -1 cup chocolate chips
- Mix together the wet ingredients (egg, milk, butter) until well combined. Add in the flour, baking powder, salt, and sugar. Mix until smooth.
- Butter a pan and once it’s hot enough (drop a little bit of batter in the pan and if sizzles, its hot enough). Pour the batter into the pan (you can use a ladle or measuring cup) and sprinkle the chocolate chips on top. Once the edges of the pancake is bubbled and looks dry, take a rubber spatula and flip the pancake. Once the pancake is nice and browned, remove it from the pan and repeat with the rest of the batter.
- Top with maple syrup or whipped cream and enjoy!
